Our honey is harvested throughout the season when it is safe and acceptable for the bees, usually once a week while wildflowers are in bloom. This means our honey comes from small batches that were carefully thought out. We can always tell you exactly which hive your bottle of honey came from and what was in bloom at the time. Next time you buy honey from your local beekeeper, ask them which hive that particular bottle they are trying to sell you came from. Most beekeepers couldn't tell you as their honey is mixed in big batches that is stored long-term and then heated when they want to bottle it.
Our honey will crystallize over time, some batches quicker than others. This is completely normal and expected with high-quality raw unheated honey.
